PerfectDay, a Californian company that produces nature-identical milk proteins via precision fermentation, is about to launch into larger-scale production. As Ryan Pandya, co-founder and CEO of PerfectDay, explained at the Zenith Global Dairy Congress on 23 June, his company delivers a protein powder that contains 95% whey protein, 0.3% fat, 0.8% minerals, 0.9% carbohydrates and no lactose. Pandya stated the moisture content to be 3.5%. No processes need to be changed to process this non-animal whey protein, and the powder is tasteless, according to Pandya.
PerfectDay holds more than 50 patents and has applied for patents on about 50 other developments. The sales focus is on a range of products, including liquid milk, cheese, ice cream and yoghurt. According to Pandya, partnerships with major companies in the food and foodservice sector have already been signed for marketing, names will be announced soon. Over the next five years, PerfectDay plans to expand its production capacity to several tens of thousands of tonnes per year.
