A new class of industrial food ingredients

One of food processing’s oldest and most stubborn challenges is how to dry fruits, vegetables and aromatic plants while keeping the fresh taste, color and nutritional value intact. Traditional ingredient processing methods often rely on chemical transformation processes that alter the original characteristics of raw materials. Dry4Good, an industrial FoodTech company specializing in the production of high-value natural ingredients, has built a technology — and an industrial facility — to solve this differently. Its precision-drying process preserves the organoleptic and nutritional qualities of fresh produce in additive-free ingredients, giving food manufacturers a genuine alternative to ultra-processing. Three years after opening its first production site near Paris, the company has secured €5 million to expand capacity and support growing commercial demand from leading global food manufacturers.

Conventional industrial drying — typically performed at high temperatures — is fast and cost-effective, but it degrades the very compounds that give fresh fruits, vegetables and herbs their flavor, color and nutritional value. Aromatic molecules are volatile. Pigments break down under heat. Vitamins and micronutrients are lost. The result is dried ingredients that require artificial flavorings, colorings and additives to make finished products taste and look acceptable.

Dry4Good’s process works differently. By drying at ambient temperature through a precisely controlled combination of physical and mechanical parameters, it removes water while keeping the ingredient’s aromatic compounds, natural pigments and nutrients largely intact. As water leaves, these qualities do not disappear. Instead, they concentrate. The outcome is a new class of industrial ingredients that are concentrated versions of the fresh product.
